手打ち あさま
Tucked into Nakameguro, Teuchi ASAMA highlights homemade flat-cut noodles sliced and kneaded to order. Enjoy a layered chicken-and-seafood shoyu broth, two styles of chashu, and finely shredded menma in a calm, cashless setting.
01 / ABOUT THE PLACE
A meal here begins with the crisp, rhythmic chop of noodle cutting from the kitchen and the deliberate motion of noodles being hand-kneaded across the counter. Tucked into a backstreet of Nakameguro, Teuchi ASAMA makes a clear statement with its homemade hand-cut noodles, sliced and boiled strictly to order. Made with Hokkaido wheat, these curly, flat-cut noodles feature irregular thickness and vigorous waves. They deliver a delightfully fluttery slurp alongside a resilient, chewy bite, offering a dynamic mouthfeel with every mouthful.
Catching those noodles is a soy sauce-seasoned broth built on local chicken stock, including Kuro Satsuma chicken, layered with dried accents like niboshi dried sardines and smoked fish flakes. A blend of multiple soy sauces lends an aromatic fragrance and pleasant sharpness, yielding a deep, sturdy richness beneath its clean, light texture. Care also shines through in the bowl's garnishes: two styles of chashu—pork belly seared just before serving for a fragrant char, alongside savory shoulder roast packed with meaty flavor—and ultra-thinly shredded menma seasoned with black pepper provide rhythmic accents as you work through the bowl.
The menu centers on the staple Shoyu Ramen, flanked by an Ajitama Ramen with a soft, jammy yolk, meat-loaded Chashu-men, and the deluxe Tokusei Ramen. Noodle portions can be ordered in regular (150 g) or medium (200 g) at no extra charge, making the medium size an appealing choice if you want to fully savor the satisfying heft of hand-cut noodles. The interior is a calm, intimate space of just 9 counter seats arranged in a U-shape, and the ticket vending machine is completely cashless, accepting credit cards, transit IC cards, and various QR code payment methods. Operating hours primarily cover lunch from 11:30 to 15:00 with Thursdays closed, so checking the cashless-only policy and midday schedule in advance ensures a smooth visit.
